Unlike the similar menu in the Finder, Mail’s “Open With” menu does not display the version number if multiple copies of an application are available:
Icons would also be nice for additional consistency with the Finder, but the version number is more important.

I believe to fix that you have to rebuild the launchservices database. Onyx can do that (and other system tools should too).

I believe it is a difference in how the menus are implemented that would require code changes to alter. Rebuilding the LaunchServices database with Cocktail yielded no changes.
